A couple of early copies of KanjiTalk I picked up online. These early (pre-System 6) versions aren't on any of the Developer CDs I've seen. If anyone can add KT1.1 that would be nice.

Each consist of two disks: system and font. For KT1.0 boot from the System disk and insert the Font disk when prompted. You'll need to swap disks a couple of times during boot to load the fonts. For KT2.0 there's no prompt and it just boots to a system with some broken fonts. Obviously copying the contents of the disks to a hard disk is much better.
