I want to make a game for os 7-8-9 (6). I would like to be such as Alone in the Dark, how could I make it?

Whole books have been written about writing games. You should probably read one of them.

But you can start by choosing a Development Environment. Metrowerks Codewarrior became the predominant / defacto standard one before Apple put them out of business.
