There are a lot of games that fit that description. You'll have to be more specific.
Here are some questions that might help:
Approximately when did you first play it?
Was it in black and white, or color?
Did you see the maze in first-person 3D, or from overhead?
Do you remember some of the items that could be collected, or any other details?
I don't remember how long ago it was that I played this game, I remember that it was on Mac OS 9

Mmmm, this was my favourite arcade at Uni, I could put 10p in and play from 8am to 1am.
Don't think the version in the video was ever released for Mac, but you can play the very original (and infinitely better) arcade version easily on Mac or PC, using a MAME emulator. Called MacMAME for Mac, I'm sure there's a plethora of PC versions if you use Google.
We have the official Gauntlet for Macintosh. You can play it in Mini-vMac.
