Questions about OS 7.5.3 and transfering files

Hello everyone,

I have few questions about my old macintosh and I would be very grateful if you could help me.
I have macintosh IIvx running on OS 7.5.3. I've managed to install clean system on it and I'm using windows 7 PC to make floppy disks
First problem: I'm using Winimage to make disks from .img and .dsk files, these types aren't problem. I also have MacDisk to transfer files from PC to mac disks. I've downloaded some of .sit archives from macintoshgarden, unpacked them (this might be the reason of further problems) and copied files on floppy. On Mac I copy files from disk to HDD but games or programs doesn't work. I've read unpacking on windows may cause problems so I've downloaded Stuffit 3.5.1 img and write it on disk (I wanted to copy .sit files directly to macintosh and then unpack them). On macintosh I have stuffit icon but i don't know how to use it, maybe dumb but I've never seriously used macintosh before.
Another question is more ,Macintosh basics' question. I couldn't open some text file so when mac asked which program to use, I've choosed Simpletext. Now macintosh try to open everything i click with simpletext, even .sit. How to change it?
Sorry for newbie questions and thank you for answers

OK, stuffit problem solved, version 5.5 works fine

The old MacOS used resource forks to identify files called file and creator IDs.
As resource forks and IDs are lost on non Mac file systems, the default app (SimpleText) tries to open a file. The solution is to move files and apps in containers like img, dmg, sit etc. like you are already doing.

My advice is setting up BasiliskII and/or SheepShaver on the Windows rig, process your downloads and write your stuff to HFS HD floppies. BasiliskII Build 142 can handle Mac floppies.
Ctrl-Shift-12 forces a Mac floppy to mount.

You'll often get blank icons called "generic icons", on files that come from another operating system. Usually this is because the Macintosh Creator & File ID's are missing for a variety of reasons such as those mentioned by 24bit. The Mac won't know how to open these when you double-click them so in your case its launching SimpleText.

To deal with these files relatively easily, click-drag a generic file's icon over onto an icon or alias(1) of the program you want to open it with and then let the mouse go.

For example; When you drag a file such as a ".sit" icon onto Stuffit Expander's icon, you should notice Stuffit's icon highlight (darkens). Let the mouse go then and Stuffit will launch and deal with the ".sit" file OK.

(1) an "alias" icon is the Macintosh equivalent of a Windows "shortcut" icon. To create an alias, select an icon with a single click, go to the "File" menu and choose "Make Alias" (or simply type the "Command" & "M" keys) and move the alias to where you need it. With Macintosh System Software 7.5.3, there are also 3rd party extensions that enable pressing the "Control" keyboard key + "drag with mouse" to auto-create alias icons.
