I recently updated to Lion, and while everything still works, I can't seem to get Sheepshaver to see disc images as CDs. It always mounts them as Hard Drives. I'm not sure if this is just an issue with Lion, or if I'm just doing something wrong.

You can assign the images to SheepShaver via SS's prefs. There´s a handy GUI for SS which gives you access to the prefs without running SS itself. Best place to get the GUI for SS, and a lot more information on emulating a Mac, is from Emaculation; http://www.emaculation.com/

SheepShaver is patching the Mac ROM quite a bit. SS volumes are treated as big floppies rather than HDDs.
If that causes problems, try mounting your images from within the Shaver with Toast or http://macintoshgarden.org/apps/virtual-dvd-romcd-utility
